Low Point Folded Chicken Wrap

Folded wraps are perfect for an easy dinner!

This wrap is filled with chicken, melted cheese, lettuce, sautéed peppers and onions.

It’s a quick, healthy, tasty meal that’s low in points. It’s also low carb, only 8 net carbs per serving.

The Ingredients

Chicken: You can use boneless chicken breast or thighs since both are zero points with the current Weight Watchers plan.

Taco Seasoning: You can make your own or use store-bought.

Flour Tortillas: I used Mission Carb Balance flour tortillas. They taste great and they’re only 2 points each.

Cheese: Using reduced-fat Mexican cheese helped to keep the folded wrap low in points.

Lettuce: I added shredded iceberg lettuce to one section of the folded wrap. It gives it a little crunch for no additional points.

Vegetables: I sautéed red bell pepper and onion. These veggies add a sweet and savory dimension to the wrap.

How to Make Chicken Folded Wraps

Slice the bell pepper and onion. Add it to a nonstick pan sprayed with cooking spray. Sautée the vegetables for 10 minutes over medium heat.

Cut the chicken into uniform bite-size pieces. That way the chicken cooks evenly.

Place the chicken in a bowl and add the taco seasoning. Mix the chicken to make sure it gets coated evenly.

Add the chicken to a nonstick skillet and cook over medium heat for 5-7 minutes or until the chicken reaches an internal temperature of 165 degrees.

Lay out a tortilla on a flat work surface. Cut the tortilla in the center halfway up.

Each 1/4 of the tortilla will be filled with a different ingredient and then folded up.

I did lettuce, veggies, cheese then chicken.

Cheese and chicken were last since those are the two ingredients directly on the pan.

Once you’ve added all of the ingredients start folding up the tortilla from the bottom left.

Next, I spritzed my nonstick pan with olive oil spray and added the wrap. Let it cook over medium heat for 2-3 minutes on each side.

Cooking times can vary depending on your stove. The goal is to achieve a golden-brown crust on the tortilla while allowing the cheese inside to melt completely.

Serving Suggestions

I like to serve my folded wrap with a side of sour cream and salsa. It adds a lot of flavor with minimal points.

For a more indulgent touch, a small serving of guacamole can elevate the meal. The creamy texture and rich flavor of avocados pair wonderfully with the wrap.

Ingredients

  • 1 lb. boneless skinless chicken breast or thighs, cut into bite-size pieces

  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 4 Mission Carb Balance flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup reduced-fat Mexican cheese, shredded

Instructions

  • Place the chicken in a bowl and add the taco seasoning. Mix the chicken to make sure it gets evenly coated.
  • Add the chicken in a nonstick skillet and cook over medium heat for 5-7 minutes or until the chicken is cooked through.
  • Lay out a tortilla on a flat work surface. Cut the tortilla in the center halfway up.

  • Fold the tortilla up one section at a time starting from the bottom left.
  • Spray a nonstick pan with cooking spray. Place the pan over medium heat and add the folded wraps. Cook the wraps for 2-3 minutes on each side or until golden-brown.

  1. I saw something about tortilla’s wrapped something like this recipe & it was put in the toaster!! No mess because inserted side is folded up!!! Will be trying this, too!
