Loaded Ranch Chicken Soup

Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 4 cups reduced sodium chicken broth
  • 1 oz. ranch seasoning
  • 4 oz. reduced-fat cream cheese
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 4 slices center cut bacon, cooked and crumbled
  • 2 green onions, chopped

Instructions

For the Instant Pot:

  • Add the chicken, chicken broth, and ranch to the Instant Pot. Secure and lock the lid. Set the time to 12 minutes. Once the timer goes off, release the pressure.
  • Remove the chicken and shred it. Stir the cream cheese until melted, then add the cheddar cheese. Mix until smooth. If needed, press sauté for 2-3 minutes.
  • Pour into four bowls and top with cooked bacon and green onions.

For the slow cooker:

  • Add the chicken, chicken broth, and ranch to the slow cooker. Cover and cook on low 6-7 hours or high 3-4 hours.
  • Remove the chicken, shred with two forks, and return to the pot. Stir in the cream cheese until melted and smooth.
  • Pour into four bowls and top with cooked bacon and green onions.
