Lightened Up Taco Salad

Ingredients

  • 1/2 lb. 96% lean ground beef
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 head iceberg lettuce, chopped
  • 1 cup grape or cherry tomatoes, cut in half
  • 1 small yellow onion, chopped
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • 16 nacho cheese Doritos
  • 3/4 cup Ortega taco sauce
  • 1/4 cup Fat-free sour cream

Instructions

  • Add the ground beef to a pan and season with the cumin, garlic powder, onion powder, salt, and black pepper.
  • Once the ground beef is cooked through drain any grease and set aside to cool.
  • Add the lettuce, tomatoes, onion, and cheese to a large mixing bowl.
  • Place the Doritos in a large zip-up bag. Use a meat mallet, rolling pin, or frying pan to break the Doritos into smaller pieces. Add the Doritos to the mixing bowl.
  • In a small bowl add the Ortega taco sauce and fat-free sour cream. Whisk together until combined.
  • Add the cooked ground beef to the salad and top with the dressing. Mix together until the dressing is well combined.
