Lightened Up Taco Salad

This is a traditional taco salad that’s been lightened up. We’re talking only 4 points per serving!

Each serving is 2 cups so it’s a good serving size.

The Ingredients

I used all of the classic taco salad ingredients (including Doritos) and topped it off with an easy-to-make dressing.

Ground beef: I used 96% lean ground beef. It’s an easy way to reduce the calories and fat. Any lean ground beef that is 0 points will work for this recipe.

Doritos: No taco salad is complete without Doritos! I used regular cheese flavored Doritos, but I limited the amount.

The recipe only uses 16 Doritos but they’re broken into smaller pieces so it seems like there’s more than there is.

Cheese: Instead of regular cheese I used reduced-fat Mexican cheese.

Using 1/2 cup of reduced-fat cheese only adds 6 points to the entire recipe.

Lettuce: I used iceberg lettuce. It’s what I grew up eating with taco salad so it’s my go-to. Feel free to use romaine or your favorite lettuce.

The dressing: I mixed Ortega taco sauce and fat free sour cream together. It’s delicious! It turns it into a creamy taco sauce.

If you don’t like spicy foods I would recommend getting the mild taco sauce. Medium adds a little bit of heat.

Onion and tomatoes: More classic taco salad ingredients. Feel free to mix it up – try adding black beans or corn.

How to Make Lightened Up Taco Salad

Add the ground beef to a pan and season it with garlic powder, onion powder, cumin, salt, and pepper.

Once the beef is cooked through drain any grease and set aside to cool down.

While the meat is cooking I was chopping the veggies.

Cut the head of lettuce into bite-size pieces and add it to a large mixing bowl.

Slice the grape tomatoes in half and add them to the mixing bowl.

Chop the onion and add it to the mixing bowl.

Measure 1/2 cup of the Mexican cheese and add that to the bowl.

Add 16 Doritos to a large zip-up bag. Use a meat mallet, rolling pin, or pan to break the Doritos into smaller pieces. Pour the Doritos over the lettuce mixture.

In a small mixing bowl, whisk together the Ortega taco sauce and fat-free sour cream.

Add the ground beef to the mixing bowl and pour the dressing over it. Thoroughly mix together all of the ingredients.

Ingredients

  • 1/2 lb. 96% lean ground beef
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 head iceberg lettuce, chopped
  • 1 cup grape or cherry tomatoes, cut in half
  • 1 small yellow onion, chopped
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • 16 nacho cheese Doritos
  • 3/4 cup Ortega taco sauce
  • 1/4 cup Fat-free sour cream

Instructions

  • Add the ground beef to a pan and season with the cumin, garlic powder, onion powder, salt, and black pepper.
  • Once the ground beef is cooked through drain any grease and set aside to cool.
  • Add the lettuce, tomatoes, onion, and cheese to a large mixing bowl.
  • Place the Doritos in a large zip-up bag. Use a meat mallet, rolling pin, or frying pan to break the Doritos into smaller pieces. Add the Doritos to the mixing bowl.
  • In a small bowl add the Ortega taco sauce and fat-free sour cream. Whisk together until combined.
  • Add the cooked ground beef to the salad and top with the dressing. Mix together until the dressing is well combined.
