Peel and grate the potato. Use a cheesecloth or a clean dishtowel to squeeze out any excess moisture from the potatoes. Add the potatoes to a large mixing bowl. In a small bowl. whisk the egg. Add the flour, garlic powder, onion powder, salt, and pepper. Stir together.
Pour the egg mixture into the potato bowl and stir until combined.
Preheat the nonstick frying pan over medium heat and spray with olive oil spray.
Use a 1/4 cup measuring cup to scoop up the potato mixture and add it to the nonstick frying pan. Use the bottom of the measuring cup to flatten the potato.
Let the potato pancakes cook for 4 minutes, then spray the top of the potato pancakes with olive oil spray. Flip them carefully to avoid breaking them.
Cook an additional 4 minutes, or until the potato is golden in color. Remove from the pan and serve warm.
