Lightened Up Potato Pancakes

Ingredients

  • 12 oz. Russet potato
  • 2 tablespoon all-purpose flour
  • 1 egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Olive oil spray

Instructions

  • Peel and grate the potato. Use a cheesecloth or a clean dishtowel to squeeze out any excess moisture from the potatoes. Add the potatoes to a large mixing bowl.
  • In a small bowl. whisk the egg. Add the flour, garlic powder, onion powder, salt, and pepper. Stir together.
  • Pour the egg mixture into the potato bowl and stir until combined.
  • Preheat the nonstick frying pan over medium heat and spray with olive oil spray.
  • Use a 1/4 cup measuring cup to scoop up the potato mixture and add it to the nonstick frying pan. Use the bottom of the measuring cup to flatten the potato.
  • Let the potato pancakes cook for 4 minutes, then spray the top of the potato pancakes with olive oil spray. Flip them carefully to avoid breaking them.
  • Cook an additional 4 minutes, or until the potato is golden in color. Remove from the pan and serve warm.
