Lemon Chicken Pasta (Ten Dollar Meal)

Ingredients

  • 8 oz. penne pasta (uncooked)
  • 1/2 cup pasta water
  • 1 lb. boneless, skinless chicken breast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 tablespoon butter
  • 3 cloves garlic, minced
  • Juice from one lemon
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Cook the pasta according to the directions on the box. Reserve 1/2 cup of the pasta water.
  • Cut the chicken into bite-size pieces. Season with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Add the chicken to a nonstick skillet and cook until no longer pink. Remove the chicken and cover to keep warm.
  • Melt the butter in the same skillet. Add the garlic and cook for 1 minute.
  • Add the lemon juice to the skillet and stir together. Add the cooked noodles, chicken, and reserved pasta water. Mix together, then top with the parsley.
  • Optional: Top with Parmesan cheese.
