Jalapeno Popper Chicken Salad

Yield: 4 servings (Each serving is 1/2 cup. 3 points per serving for blue and purple, 5 points for green.)

Ingredients

  • 2 boneless, skinless chicken breasts, cooked
  • 2 slices center cut bacon, cooked and chopped
  • 2 tablespoons reduced fat cheddar cheese, shredded
  • 1 jalapeno, seeds removed and chopped
  • 2 scallions, chopped
  • 1/3 cup reduced fat mayonnaise
  • 1/8 teapoon garlic powder
  • 1/8 teaspoon salt
  • Pinch of pepper

Instructions

  • Add all of the ingredients to a mixing bowl and stir together.
  • Serve in lettuce wraps or on low point bread.
