Italian Wedding Soup (Low Carb and Weight Watchers Friendly)

This Low Carb Italian Meatball Soup is hearty, flavorful, and packed with wholesome ingredients that fit perfectly into a low carb or Weight Watchers friendly lifestyle.

It’s made with lean meatballs, riced cauliflower, fresh veggies, and spinach – all simmered in a savory broth.

Each bowl is warm, satisfying, and full of nutrients without all the carbs or calories.

The Ingredients

Lean Ground Beef: A great source of protein that helps keep you full and supports lean muscle mass. Using lean options keeps saturated fat and calories low while still delivering delicious flavor.

Egg: Helps keep the meatballs together while providing nutrients like choline and vitamin D.

Parmesan Cheese: A small amount adds big flavor! Parmesan is lower in lactose and high in calcium and protein.

Fresh Garlic & Onion Powder: Add natural depth of flavor with antioxidants and anti-inflammatory properties.

How to Make Italian Wedding Soup

First, you want to prepare the breadcrumbs, this can be done ahead of time.

Line a baking sheet with parchment paper. Tear the bread into 1″ pieces and add them to the baking sheet on a single layer.

Bake for 7-10 minutes, flipping halfway through. Keep an eye on the bread during the last 2 minutes so it doesn’t burn.

Once the bread has cooled, add it to a food processor. Pulse until it is a breadcrumb consistency.

In a large bowl, mix together ground beef, egg, Parmesan, breadcrumbs, garlic, Italian seasoning, onion powder, salt, and pepper. Form into twenty 1″ meatballs.

Heat a large nonstick pot over medium heat. Add meatballs and brown on all sides for about 4–5 minutes (they don’t need to be fully cooked). Remove and set aside.

Remove any excess grease from the pan. Add two teaspoons of olive oil to the pan, then add onion, celery, carrot, and garlic. Cook 3–4 minutes until softened and fragrant.

Add chicken broth, Italian seasoning, and crushed red pepper flakes. Stir to combine, then return the meatballs to the pot.

Stir in the riced cauliflower and simmer uncovered for 15–20 minutes, or until the meatballs are cooked through and the cauliflower is tender.

Stir in the spinach and cook just until wilted, about 1–2 minutes.

Ladle into 4 bowls and serve hot.

  • 1 lb. 93% lean ground beef
  • 2 slices Aunt Millie's Live Carb Smart White Bread
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

For the soup:

  • 2 teaspoons olive oil
  • 1/2 cup onion, chopped
  • 2 celery stalks, chopped
  • 1 small carrot, chopped
  • 2 cloves garlic, minced
  • 4 cups low sodium chicken broth
  • 1 cup riced cauliflower
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 cups fresh spinach
