Healthy Pumpkin Pancakes

Ingredients

  • 1/2 cup canned pumpkin
  • 2 eggs
  • 1/3 cup Bisquick Heart Smart
  • 2 tablespoons skim milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon

Instructions

  • Preheat a nonstick frying pan or griddle over medium-low heat.
  • In a medium bowl add all of the ingredients and whisk together.
  • Spray the pan with nonstick cooking spray. Pour 1/4 cup of the pancake batter into the pan or griddle. Let it cook for 3 minutes then flip and cook the other side for 3 minutes.
  • Pumpkin pancakes are best served warm.
