Ham and Cheese Panini

This sandwich is perfect for using up leftover ham from the holidays!

I usually do two things with leftover ham, use it for sandwiches and make split pea soup.

Even though I don’t like peas I love split pea soup.

A panini is similar to a grilled cheese, but even better. I love that you don’t have to worry about flipping the sandwich.

If you don’t have a panini press, you can use an indoor electric grill.

The Ingredients

Ham: I used leftover ham but regular ham lunchmeat would work great too.

Low point bread: Using bread that’s only 1 point per slice helps keep the recipe low in points.

I like using Aunt Millie’s Live Carb Smart white bread or Sara Lee 45 calorie bread.

Sargento Ultra Thin Swiss Cheese: One slice is only 1 point. Although the cheese slices are thin the sandwich is still cheesy.

Light mayonnaise and Dijon mustard: This is the perfect condiment to a ham and cheese sandwich.

Extra toppings: I also added red onion and tomato to my panini. Feel free to experiment and use your favorite toppings.

Cooking spray: Instead of using butter to make the bread crispy, I sprayed the panini maker with cooking spray.

How to Make a Ham and Cheese Panini:

To get started, I used a food scale to weigh 2 ounces of ham.

I sliced the tomato and red onion and set that aside.

In a small bowl add the light mayonnaise and Dijon mustard. Mix it together.

Lay out the bread slices. Add the ham, tomato, onion, and Swiss cheese.

Spread the mayonnaise mixture on the empty slice of bread and close the sandwich.

Spray a pre-heated panini press or indoor electric grill with cooking spray and add the sandwich.

Close the press and cook until the bread is golden and crispy. It should only take a couple of minutes.

  • Pickles
  • Carrots and celery
  • Coleslaw

Ingredients

  • 2 slices low point bread
  • 2 oz. cooked ham
  • 1 tablespoon light mayonnaise
  • 1 teaspoon Dijon mustard
  • Tomato, sliced
  • Red onion, sliced
  • 1 slice Sargento ultra thin Swiss cheese

Instructions

  • Preheat the panini press.
  • In a small bowl, stir together the light mayonnaise and Dijon mustard.
  • Lay out the bread slices. Add the ham, tomato, red onion, and cheese to one side.
  • To the other side, spread on the mayonnaise mixture and close the sandwich.
  • Spray the panini press with cooking spray, add the sandwich and close. Let cook 2-3 minutes or until the sandwich is golden and crispy.
