Greek Orzo Salad

This Greek Orzo Salad is the perfect side dish for summer grilling!

One half cup is only 3 points per serving.

If you grilled a skinless chicken breast, you could even have one whole cup for only 6 points. It’s very filling and delicious!

Even though it’s a Greek salad the taste of lemon gives it a summer like taste. It’s so refreshing!

The Ingredients

  • Orzo
  • English cucumber
  • Cherry tomatoes
  • Red onion
  • Reduced-fat feta cheese
  • Lemon
  • Extra virgin olive oil
  • Red wine vinegar
  • Oregano
  • Salt and pepper

This orzo salad has some typical Greek ingredients. Cucumber, tomatoes, red onion, oregano – which are all zero points!

Of course I had to add some feta cheese, I bought the reduced-fat feta.

My orzo took about 8 minutes to cook so while that’s cooking I cut up the cucumber, tomatoes and onion.

I also made the dressing, which is very easy.

I used a lemon juicer similar to this one:

I absolutely love it! I make salad dressing quite often and it comes in handy. After I squeeze the lemon, I take the lid off and add the rest of my ingredients.

No need to dirty another jar!

Once the orzo was drained I put it in a mixing bowl and added the dressing. Then I added the rest of my ingredients.

You can eat it right away or let it sit in the fridge for an hour.

Ingredients

  • 8 oz. Orzo
  • 1 English cucumber, chopped
  • 1 pint cherry tomatoes, cut in half
  • 2 tablespoons red onion, chopped
  • 1/2 cup reduced-fat feta cheese
  • Juice from 1/2 lemon
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon oregano
  • Pinch of salt and pepper

Instructions

  • Cook orzo according to the directions on the box, then drain.
  • While the orzo cooks chop the cucumber, tomatoes and red onion.
  • Mix together the lemon juice, olive oil, red wine vinegar, oregano, salt and pepper.
  • Add the orzo to a mixing bowl and stir in the dressing. Add the cucumber, tomatoes, red onion and feta cheese. Mix it all together and serve!
