Cobb Salad with Green Goddess Dressing
This salad is the perfect meal on a hot summer day!
It’s great for lunch or dinner. Plus it’s filling and low in points.

The dressing is a lightened up version of Panera’s Green Goddess Dressing. They have the actual recipe on their website.
The Ingredients
I used the basic ingredients for a cobb salad.
Chicken: I used boneless, skinless chicken breast since it’s zero points. I seasoned it with garlic powder, onion powder, salt, and pepper. I cooked it in a nonstick skillet for 5 minutes on each side.
Bacon: I used center cut bacon since it’s lower in points. Two pieces of bacon is only 2 points.
Hard boiled egg: I love hard boiled eggs in salad plus it adds protein.
Tomato: I used a roma tomato but you can also use grape or cherry tomatoes.
Red onion: This adds a nice pop of color and flavor.
The dressing: Fat free Greek yogurt, light mayonnaise, fresh basil, shallot, basil pesto, white wine vinegar, Splenda, Dijon, salt, and black pepper.
I lightened up the dressing by using fat free Greek yogurt and light mayonnaise.
My version of the dressin is only 2 points for 1/4 cup. Panera’s Green Goddess Dressing is 4 points for 1/4 cup.

How to Make a Cobb Salad with Green Goddess Dressing
The dressing makes more than enough for one salad. If you use 1/4 cup of dressing for each salad you can make 8 salads.
Add the fat free Greek yogurt, light mayonnaise, fresh basil, minced shallot, basil pesto, white wine vinegar, granulated Splenda, Dijon mustard, salt, and pepper to a small mixing bowl.
Use a whisk to combine all of the ingredients. Cover and refrigerate the dressing until you are ready to use it.
To prepare the salad, I started by boiling the hard boiled egg since it takes the longest.
Next, I cooked the chicken breast. I seasoned it with garlic powder, onion powder, salt, and pepper.
I cooked the chicken breast for 5 minutes on each side in a nonstick skillet.
While the chicken was cooking I also cooked the bacon. Once it was done cooking I put it on paper towel and removed any extra grease.
To assemble the salad I added romaine lettuce, chicken breast, bacon, red onion, tomato, and hard boiled egg. I topped it with 1/4 cup of the Green Goddess Dressing.
Meal Prep
This salad is great for meal prep, simply prepare extra ingredients all at once.
Cook multiple chicken breasts, hard boiled eggs, and multiple pieces of bacon.
Chop extra tomatoes and red onions.
I like to keep the dressing separate until I’m ready to eat the salad. I don’t like the lettuce to get soggy.
Cobb Salad with Green Goddess Dressing

Ingredients
For the dressing:
- 1 cup fat free Greek yogurt
- 1/2 cup light mayonnaise
- 1 oz. fresh basil
- 2 tablespoons shallots, minced
- 2 tablespoons basil pesto
- 1/4 cup white wine vinegar
- 1 tablespoon granulated Splenda
- 1 teaspoon Dijon mustard
- Pinch of salt and black pepper
For the salad:
- 2 cups romaine lettuce, chopped
- 1 boneless, skinless chicken breast (seasoned and cooked)
- 2 slices center cut bacon, cooked and drained of grease
- 1 hardboiled egg
- 2 tablespoons red onion, sliced
- 1/4 cup chopped tomatoes
Instructions
- Whisk together the dressing ingredients in a small mixing bowl. If the dressing is too thick you can add some water to thin it out.
- To assemble the salad – add the romaine lettuce, chicken breast, bacon, hard boiled egg, red onion, and tomatoes to a bowl. Top with 1/4 cup of dressing.
