Greek Chicken Bowls

Ingredients

  • 2 cups cooked white rice
  • 1 lb. boneless, skinless chicken breast
  • Greek seasoning
  • 1 cup fat-free Greek yogurt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 English cucumber
  • 1/4 cup chopped red onion
  • 1 tomato
  • 1 cup chickpeas (drained and rinsed)
  • 1/4 cup reduced-fat feta cheese

Instructions

  • Shred 1/4 of the English cucumber. Add it to a small bowl with the Greek yogurt, garlic powder, dill, lemon juice, salt, and pepper.
  • Season the chicken breasts with the Greek seasoning. Spray a nonstick pan with cooking spray and cook the chicken breast 3-4 minutes on each side over medium heat, or until it reaches an internal temperature of 165 degrees.
  • Assemble the bowls by adding the rice, chicken, tomatoes, chickpeas, feta cheese, red onion, cucumbers, and tzatziki sauce.
