Fattoush Salad

Ingredients

  • 1 Ole Xtreme High Fiber Tortilla
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • 2 heads of romaine lettuce
  • 1 cup English cucumber, sliced
  • 1 tomato, chopped
  • 1/2 small red onion, sliced
  • 1/2 cup parsley, stems removed and chopped

For the dressing:

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon sumac powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 350 degrees F.
  • Cut the tortilla into bite size pieces (I used a pizza cutter). Add it to a cookie sheet and spray with olive oil spray. Season with garlic powder and salt. Bake 6-8 minutes or until crispy. The cooking time will vary depending on the size of the tortilla pieces.
  • Chop the romaine lettuce and add it to a large bowl. Add the cucumber, tomato, red onion and parsley.
  • In a small bowl mix together the olive oil, lemon juice and sumac powder.
  • Add the dressing to the salad then add the tortilla pieces. Mix well and serve immediately.
