Egg Salad

Ingredients

  • 4 hard boiled eggs
  • 1/4 cup light mayonnaise
  • 1 teaspoon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons celery, chopped
  • 1 teaspoon fresh chives, chopped

Instructions

  • Peel the eggs. Separate the egg yolks from the egg whites and add them to a medium bowl.
  • Use a fork to mash the egg yolks. Add the mayonnaise, mustard, garlic powder, onion powder, salt and pepper. Mix together.
  • Cut the egg whites into small pieces. Add the egg whites, celery and chives to the yolk and mix together.
  • Serve as is, in a lettuce wrap, with crackers or as a sandwich.
