Easy Stuffed Peppers

Ingredients

  • 4 peppers (red, green, yellow or orange)
  • 1 lb. Laura's lean ground beef (96% lean)
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup brown rice, cooked
  • 1 1/4 cup tomato sauce, divided
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 3/4 cup part skim mozzarella cheese, shredded

Instructions

  • Preheat oven to 350 degrees F.
  • Wash the peppers, cut the tops off and remove the seeds. If you like a softer pepper add them to boiling water for 2 minutes and drain.
  • Spray a baking dish with cooking spray and add the peppers open face up.
  • In a large skillet add the ground beef, onion and garlic. Drain the ground beef once it is cooked through.
  • Stir in the cooked rice, 1 cup of tomato sauce, Worcestershire sauce, Italian seasoning, salt and pepper. Cook on medium heat for 2 minutes, until the mixture is warmed through.
  • Evenly divide the meat mixture in the peppers. Top each stuffed pepper with one tablespoon of tomato sauce.
  • Bake for 20 minutes. Remove, top with cheese then bake 5 minutes, or until the cheese melts.
