Easy Beef Goulash
This Easy Beef Goulash is one the whole family will love!
It only takes a few minutes to prepare, it’s all made in one pot, and cleanup is a breeze.
This meal is both delicious and more health-conscious. Each bite offers a flavorful mix of vegetables, tender noodles, and savory beef, making it a comforting choice for any evening.

The Ingredients
Ground Beef: Using 96% lean ground beef is a great way to lower the points without sacrificing flavor.
Fresh Vegetables: Green bell pepper, onion, and fresh garlic bring a ton of flavor without adding points.
Petite Diced Tomatoes: These are perfect for goulash because it gives you small bites of tomatoes in each bite.
Tomato Sauce: This adds flavor and liquid to the goulash. It will also help cook the noodles.
Beef Broth: This helps to add more beefy flavor and adds liquid for the noodles to cook in and absorb.
Worcestershire Sauce: Just a couple splashes will add more flavor to the goulash.
Seasonings: Italian seasoning, paprika, salt, and black pepper help to season the goulash.
Macaroni Noodles: I used one cup of dry noodles in this goulash recipe because it helps to lower the points.

Preparation Steps
Start by chopping the onion and mincing the garlic, setting them aside for later use. Next, dice the green and place them in a bowl.
Measure out your paprika, Italian seasoning, salt, and pepper, keeping them within reach to streamline the cooking process.
Open the cans of diced tomatoes and tomato sauce, and set them aside along with the measured beef broth. Having these ingredients prepped and ready will make the cooking process smoother.
Now, measure out one cup of elbow noodles but keep them aside until you need to add them to the pot. This helps ensure that everything is ready to go when the time comes.
With your vegetables chopped, spices measured, and cans opened, you’re all set to dive into the cooking process.
How to Make Easy Beef Goulash
In a large pot over medium heat, add the lean ground beef and cook until browned, breaking it apart with a spatula as it cooks.
Drain any excess fat to keep the dish light. Next, add the chopped onion and minced garlic, stirring until the onion becomes translucent.
Stir in the diced bell peppers and cook for another 3 minutes.
Once the vegetables are softened, add the diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, paprika, Italian seasoning, salt, and pepper. Stir well to combine all the ingredients.
Stir in the macaroni noodles making sure they are covered by the liquid.
Bring the goulash to a boil, reduce the heat, cover and simmer for 10 minutes, stirring occasionally.
Let it cool slightly then serve.
Serving Suggestions
Add a sprinkle of freshly chopped parsley on top for a burst of color and a touch of herbal freshness.
For a touch of tanginess, serve with a dollop of sour cream or a spoonful of Greek yogurt. This not only enhances the flavor but also adds a creamy texture.

- 14.5 oz. petite diced tomatoes (with liquid)

- 1 teaspoon salt
- 1/4 teaspoon black pepper
