Cucumber Tomato Salad

Ingredients

  • 1 English cucumber, cut into bite-size pieces
  • 20 oz. cherry tomatoes, cut in half
  • 1/2 small onion, chopped
  • 1/2 cup reduced-fat feta cheese

For the dressing:

  • 1 1/2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Mix together the olive oil, lemon juice, red wine vinegar, oregano, salt, and black pepper in a small bowl.
  • Add the cucumber, cherry tomatoes, red onion, and feta cheese to a large mixing bowl.
  • Pour the dressing over the vegetables and mix together.
