Ingredients
6oz.boneless, skinless chicken breast, cooked and cut into bite-size pieces
1cupcherry tomatoes, halved
1.5cupscucumber, sliced
1/4cupred onion, thinly sliced
2tablespoonsreduced fat feta cheese
For the dressing:
2tablespoonslemon juice
1teaspoonolive oil
1teaspoonDijon mustard
Splash of red wine vinegar
Salt and pepper, to taste
Instructions
In a large bowl, combine the tomatoes, cucumber, red onion, and chicken. Sprinkle with feta cheese.
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, and red wine vinegar.
Pour the dressing over the salad and toss gently to combine. Serve immediately.
