Cucumber Salsa

Making Cucumber Salsa:

I like to use my vegetable chopper with this recipe. I love it when all of the vegetables are chopped the same size.

If you don’t have a vegetable chopper, you can practice your handy dandy knife skills.

To begin, chop the cucumber, red onion, tomato, and jalapeno and add it to a medium mixing bowl.

I removed the seeds from the jalapeno, but if you’re looking for a kick of heat you can leave the seeds in.

Next, I added the minced garlic, lime juice, salt, and pepper.

Mix everything together and refrigerate for a 1/2 hour before eating.

Serving Suggestions:

You can always go with salsa’s best friend – tortilla chips. If you’re looking to keep it WW friendly you can bake or air fry some low point tortillas to use as chips.

Another idea is to scoop it up with some pita bread. That would be perfect for a light and low point lunch.

Are you firing up the grill? This salsa makes an incredible topping for your barbecued chicken or fish, adding a refreshing contrast to the smoky flavors.

Taco night at your house? Give your tacos a unique twist with a spoonful of this salsa instead of the standard fare.

But let’s push the boundaries a bit more. Imagine your salad, usually resigned to a drizzle of ranch or vinaigrette, now tossed with your vibrant cucumber salsa. It’s a healthier alternative that doesn’t skimp on flavor!

Ingredients

  • 1 English Cucumber (remove the seeds)
  • 2 Roma tomatoes (seeds removed)
  • 1/2 small red onion
  • 1-2 jalapenos (remove the seeds if you don't want it spicy)
  • 1/4 cup cilantro, chopped
  • 2 cloves garlic, minced
  • Juice from 1 lime
  • Salt and pepper, to taste

Instructions

  • Chop the cucumber, tomatoes, red onion, and jalapenos. Add to a mixing bowl.
  • Add the cilantro, minced garlic, lime juice, salt, and pepper. Mix everything together, cover and refrigerate for 1/2 hour.
