Preheat oven to 400 degrees F.
Pat the chicken thighs dry on both sides.
In a small bowl mix together the garlic powder, onion powder, salt, pepper, paprika, Italian seasoning, and dry mustard.
Season the bottom of the chicken thighs then add them to a baking dish skin side up. Season the top of the chicken thigh then spray with olive oil spray. Rub the seasoning into the skin and under the skin.
Bake the chicken thighs for 30-40 minutes or until the internal temperature reaches 165 degrees F. During the last 5 minutes switch to broil so the skin gets crispy. Keep an eye on it so that it doesn't burn.
