Cottage Cheese Chicken Salad

Ingredients

  • 1 cup cooked boneless skinless chicken breast, cut into small bite-size pieces
  • 1/2 cup 2% low fat cottage cheese
  • 1 tablespoon light mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons red onion, chopped
  • 1/2 cup celery, chopped
  • Pinch of garlic powder
  • Pinch of onion powder
  • Salt and pepper, to taste
  • 8 slices light bread (1 point per slice. I used Aunt Millie's Lice Carb Smart white bread)

Instructions

  • Mix all of the ingredients (minus the bread) in a bowl.
  • Divide the chicken salad into 4 equal portions to make four sandwiches.
