Ingredients

cooked boneless skinless chicken breast, cut into small bite-size pieces
1/2
cup
2% low fat cottage cheese

tablespoon
light mayonnaise

teaspoon
Dijon mustard

tablespoons
red onion, chopped
1/2
cup
celery, chopped
Pinch of garlic powder
Pinch of onion powder
Salt and pepper, to taste

light bread (1 point per slice. I used Aunt Millie's Lice Carb Smart white bread)
Instructions
Mix all of the ingredients (minus the bread) in a bowl.
Divide the chicken salad into 4 equal portions to make four sandwiches.
