Cottage Cheese Chicken Salad
Cottage cheese in chicken salad gives it an extra level of creaminess and packs it full of protein.
This recipe is perfect for leftover chicken. I had chicken from the Chicken and Veggies recipe, which is what I used for this.
A rotisserie chicken would also work great.

Not only is this Cottage Cheese Chicken Salad delicious, but it’s also filling and only 3 points!
How I Kept It Low in Points
Using boneless skinless chicken breast in this recipe tastes great, and it’s 0 points.
Instead of using regular mayonnaise, I used light mayonnaise. Since I was adding cottage cheese I also reduced the amount of mayonnaise I used, which was only 1 tablespoon.
One tablespoon of light mayonnaise is only 1 point.
I used a half cup of 2% low fat cottage cheese, which was 3 points.
To keep each sandwich at only 3 points, I chose bread that was only 1 point per slice.
My go-to bread is Aunt Millie’s Live Carb Smart white bread.

How to Make Cottage Cheese Chicken Salad
Make sure your cooked chicken is cut into small bite-size pieces, and add it to a medium mixing bowl.
Add the red onion, celery, cottage cheese, mayonnaise, and Dijon mustard.
I also added a pinch of garlic powder, onion powder, salt, and pepper, then mixed it all together.
I toasted the bread and topped it with the Cottage Cheese Chicken Salad.
This chicken salad is also great for meal prep, just store the leftovers in an airtight container.
Serving Suggestions
I kept it simple and had my sandwich with some apple slices.
Pretty much any fruit would be a great 0 point side with this sandwich.
Baked potato chips are also an excellent match. Cooking them in the air fryer makes them extra crispy, but oven baked chips are also great. It’s also low in points.
Pickles are another 0 point option.
Chopped veggies with a low point ranch dip are also delicious.
Cottage Cheese Chicken Salad

Ingredients
- 1 cup cooked boneless skinless chicken breast, cut into small bite-size pieces
- 1/2 cup 2% low fat cottage cheese
- 1 tablespoon light mayonnaise
- 1 teaspoon Dijon mustard
- 2 tablespoons red onion, chopped
- 1/2 cup celery, chopped
- Pinch of garlic powder
- Pinch of onion powder
- Salt and pepper, to taste
- 8 slices light bread (1 point per slice. I used Aunt Millie's Lice Carb Smart white bread)
Instructions
- Mix all of the ingredients (minus the bread) in a bowl.
- Divide the chicken salad into 4 equal portions to make four sandwiches.
