Cilantro Lime Dressing

We’re FINALLY getting some Spring weather here in Michigan. When I think of Spring and Summer I think of salads.

Kind of like in the Fall I think of soup. As much as I love soup I don’t want to think about Fall for a while!! I’m ready for some warm weather.


Today my mission was to make a salad dressing with non-fat Greek yogurt.

I wanted to keep it low in points, but I had no idea this beautiful salad I made would end up being 0 points. BONUS!!

And it was delicious. So good in fact that my daughter stole my salad. I let her try it and she loved it.

Last night my other daughter stole my ranch baked potato chips from me. It makes me happy they enjoy eating healthy food.

I used this Mini Food Processor to make the dressing. You could also use a blender if you don’t have one. You need to use something to really break down the cilantro.

The salad dressing is made with non-fat Greek yogurt, cilantro, lime juice, ranch seasoning mix, salt, and water. That’s it! 0 points!

You could easily double the dressing recipe and store it in the fridge. It’s great for meal prep!

The salad I made had lettuce, oven baked boneless, skinless chicken breast (seasoned with garlic powder, salt and pepper), cherry tomatoes, corn, red onion and orange peppers.

If you’re in a hurry you could buy a cooked rotisserie chicken and use the chicken breasts minus the skin.

Cilantro Lime Dressing – Weight Watchers Freestyle

Ingredients

  • 1/2 cup plain, non-fat Greek yogurt
  • 1/4 cup cilantro
  • Juice from 1/2 lime
  • 1 teaspoon ranch seasoning
  • Pinch of salt
  • 1 tablespoon water

Instructions

  • Add all ingredients to a food processor or blender. Run until it is all combined and liquefied.

For the salad:

  • I used lettuce, oven baked boneless, skinless chicken breast (seasoned with garlic powder, salt and pepper), cherry tomatoes, corn, red onion and orange peppers.

    I have a question if it’s ok. I am NOT a fan of cilantro, tastes like soap to me. Is there a substitution that I could use or do you feel that the lime juice and the Ranch Mix covers up the taste of cilantro? I understand that it should be cilantro to go with the salad and if the taste is faint, I’m ok with that, thank you

      You could probably omit the cilantro. The ranch and lime juice should still give it a good flavor. I hope you like it!

  2. Hello, first off LOVE THIS RECIPE! so thank you so very much. but for the dressing, how long is it good for in the fridge once made?
