Line a baking sheet with parchment paper.
Melt the chocolate by using a microwave or a double boiler, stirring frequently to avoid burning the chocolate. In a microwave, heat the chocolate in 30-second intervals, stirring between each interval until smooth. If using a double boiler, place a heatproof bowl over a pot of simmering water and stir the chocolate until completely melted. Once your chocolate is melted, dip each graham cracker halfway into the chocolate, then place it on the baking sheet lined with parchment paper.
While the chocolate is still wet add the sprinkles. Allow the chocolate to cool and harden completely. Once the chocolate has set, your treats are ready to enjoy.
