How to Make Chocolate Banana Cups
Place the silicone mini muffin pan on a flat, stable surface to prevent any spills or uneven distribution of ingredients.
Peel the banana and slice 12 coins that are about 1/4″ thick. Carefully place one banana slice into each cup of the silicone mini muffin pan.
Make sure each slice sits flat in the cup to create a stable base for the chocolate.
Fill a saucepan with a few inches of water and place it on the stove over medium-low heat. Once the water is hot place the double boiler on top of the pan.
Break apart the chocolate bar and add it to the double boiler. It’s important to stir the chocolate occasionally with a silicone spatula to promote even melting. Avoid using metal utensils, as they can retain heat and cause the chocolate to scorch.
Use a spoon or small ladle to carefully pour the melted chocolate over each banana slice in the silicone mini muffin pan.
Make sure to fully cover the banana slices, letting the chocolate flow over the edges. This ensures that each bite offers a perfect balance of creamy banana and rich chocolate.
Once each banana slice is thoroughly coated with chocolate, place the silicone mini muffin pan in the freezer to set.
After the cups have fully set, they are ready to be enjoyed. Carefully remove the pan from the freezer and gently press the bottom of each silicone cup to release the Chocolate Banana Cups.
Storing Leftovers
This is a great snack or dessert to have on hand, it’s tasty and low in points. The recipe can easily be doubled so you have plenty of leftovers.
Place the remaining Chocolate Banana Cups in an airtight container and store them in the freezer.
When you’re ready to eat the stored cups, you can enjoy them straight from the freezer or allow them to sit at room temperature for a minute or two to slightly soften.

- 3.5 oz. sugar-free dark chocolate (I used Simple Truth 70% cacao no sugar added dark chocolate bar)

- Once each banana slice is thoroughly coated with chocolate, place the silicone mini muffin pan in the freezer to set for 30 minutes.
- Carefully remove the pan from the freezer and gently press the bottom of each silicone cup to release the Chocolate Banana Cups.
