Chicken Teriyaki Ramen

Yield: 2 servings (Each serving is about 2 cups. For blue and purple it's 9 points per serving, green is 12 points per serving.)

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cloves garlic, minced
  • 3/4 cup reduced sodium soy sauce
  • 1/2 cup water, divided
  • 1/4 cup rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger
  • 2 teaspoons cornstarch
  • 1 pack ramen noodles (discard seasoning packet)
  • 2 cups broccoli (steamed)

Instructions

  • Spray a pan with olive oil and add the garlic. Let cook for 30 seconds.
  • Add the soy sauce, 1/4 cup water, rice vinegar, brown sugar and ginger to the pan.
  • Add the cornstarch to a small bowl and stir in 1 tablespoon water. Add the cornstarch mixture to the pan and stir. Add the chicken to the pan.
  • Break the ramen noodles in half and add them to the pan. Cover the pan with a lid and cook on low for 10 minutes, stirring half way through.
  • Once the noodles are cooked stir in the broccoli and serve.
