Chicken Sausage Sheet Pan Dinner

In today’s fast-paced world, nothing beats a hearty, budget-friendly, and easy dinner that comes together quickly.

If you’re on the hunt for a satisfying meal that’s easy on the wallet, look no further than a Chicken Sausage Sheet Pan Dinner.

Besides being budget-friendly, sheet pan dinners are great because they’re easy to make and cleanup. Everything cooks on the sheet pan, so there are few dishes to wash.

The Ingredients

Today, I did my shopping at Target. I feel like most people have a Target that’s close by.

Here’s what I bought:

  • Chicken sausage – $3.99 (I bought Good & Gather Italian-style sausage)
  • Potato – $.99
  • Onion – $1.29
  • Baby carrots – $1.39
  • Broccoli – $1.29 (they didn’t have fresh so I bought frozen)

I only spent $8.95 on a dinner for 4 people that’s also Weight Watchers friendly!

How to Make This Chicken Sausage Sheet Pan Dinner

Cut the potatoes, carrots, and onion into bite-size pieces – no larger than 1 inch. If the veggies are too big they won’t cook all the way through.

Add the potatoes, carrots, onion, and broccoli to a large mixing bowl.

In a small bowl, mix together 1/4 teaspoon of garlic powder, onion powder, Italian seasoning, salt, and black pepper.

Drizzle 1 tablespoon of olive oil over the vegetables, then add the seasonings. Mix everything together really well.

Add the veggie mixture to a sheet pan in an even layer. Roast in the oven for 25 minutes, mixing halfway through.

Cut each sausage link into 5 pieces. The chicken sausage I bought is already fully cooked, so I just needed to heat it through.

Place the sausage pieces on the sheet pan and put it back in the oven for 7 minutes.

  • 4 Good & Gather Italian-style chicken sausage links
  • 12 oz. russet potato (I peeled mine but you can leave the skin on if you prefer)
  • 1 1/2 cups baby carrots
  • 2 cups chopped broccoli (I used frozen)
  • 1 medium yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 400 degrees F.
  • Cut the potatoes, carrots, and onions into bite-size pieces, no larger than 1 inch. If the veggies are too big they won't cook all the way through.
