Ingredients
2cupscooked, shredded chicken
1tablespoonfajita seasoning mix
2tablespoonswater
1/2red bell pepper, sliced
1/2green bell pepper, sliced
1/2yellow bell pepper, sliced
1smallyellow onion, sliced
1teaspoonextra virgin olive oil
4Mission Carb Balance flour tortillas
1/2cupreduced fat Mexican cheese, shredded
Instructions
Add the olive oil, sliced peppers and onion to a nonstick skillet on medium heat. Cook for 5 minutes stirring occasionally.
Remove the peppers from the pan, add the chicken, fajita seasoning and water. Stir together and cook until the chicken is heated through. Add the peppers and onion back to the pan.
Lay out a tortilla. Add the chicken mixture to half of the tortilla, then add 2 tablespoons of shredded cheese.
Add the tortilla back to the pan and cooked 2-3 minutes on each side. Repeat with all of the tortillas.
