Chicken Caprese Panini

Ingredients

  • 2 slices Aunt Millie's Live Carb Smart White Bread (or other low point bread)
  • 1 fully cooked chicken breast (I seasoned mine with garlic powder, onion powder, salt, and black pepper)
  • 2 tomato slices
  • 1 oz. fresh mozzarella (cut into two slices)
  • 4-6 basil leaves
  • 1/2 tablespoon balsamic glaze

Instructions

  • Preheat a panini press or indoor electric grill on medium heat.
  • Lay out bread slices. Top one side with the cooked chicken breast, tomato slices, fresh mozzarella, basil leaves, balsamic glaze, and the other piece of bread.
  • Spray the panini press with cooking spray and add the sandwich. Close the lid and cook 3-4 minutes or until it is crispy.
