Buffalo Chicken Tostadas

If you like buffalo chicken you’re going to want to try these tostadas!

There’s chicken in buffalo sauce on top of a crunchy tortilla with melted cheese. I topped it with an easy ranch sauce, lettuce, tomatoes, and cilantro.

You can also customize it with some of your favorite toppings.

This recipe is perfect for leftover chicken, a rotisserie chicken, or even canned chicken.

The Ingredients

Chicken: I used boneless, skinless chicken breast since it’s zero points.

Buffalo sauce: If you don’t like spicy food you can use mild buffalo sauce. If you like it on the spicy side you can go with medium or spicy.

Tostada shells: I used ole corn tostadas, two tostada shells was 3 points. They add the perfect amount of crunch.

Cheese: I used shredded part-skim mozzarella cheese.

Ranch sauce: I did an easy homemade ranch sauce by using fat free sour cream and ranch dip seasoning. It was only 1 point for 1/4 cup of fat free sour cream and 1 teaspoon of ranch mix. It’s much lower in points than regular ranch dressing.

Toppings: I topped my tostadas with shredded lettuce, tomatoes, and cilantro.

You could also use red onions, green onions, jalapenos, or additional buffalo sauce.

How to Make Buffalo Chicken Tostadas

Start by making the ranch sauce. Mix together the fat free sour cream and ranch dip seasoning mix in a small bowl. Cover and refrigerate until you’re ready to use it.

I used 10 ounces of cooked chicken breast. Shred the chicken and add it to a bowl then pour in the buffalo sauce. Mix it until the chicken is well coated.

Place two tostadas on a baking sheet. Top each shell with half of the chicken mixture.

Top the chicken with mozzarella cheese and bake for 5 minutes, or until the cheese is melted.

I let the tostadas cool slightly then topped them with ranch sauce, shredded lettuce, tomatoes, and cilantro.

These tostadas are so good and easy to make. Perfect for an easy lunch or dinner.

Ingredients

  • 2 Ole corn tostadas
  • 10 oz. boneless, skinless chicken breast, cooked and shredded
  • 3 tablespoons buffalo sauce
  • 1/4 cup fat-free sour cream
  • 1 teaspoon ranch dip seasoning
  • 2 tablespoons part-skim mozzarella cheese, shredded

Additional toppings

  • Shredded lettuce, tomatoes, and cilantro

Instructions

  • Preheat oven to 350 degrees F.
  • Add the fat free sour cream and ranch dip seasoning to a small bowl and mix until combined. Cover and refrigerate until you're ready to use it.
  • Add the chicken breast and buffalo sauce to a bowl. Mix until the chicken is coated in buffalo sauce.
  • Place the tostada shells on a baking sheet. Add half of the chicken mixture to each shell and top with the cheese. Bake for 5 minutes or until the cheese is melted.
  • Let the tostadas cool slightly then top with the ranch sauce, lettuce, tomatoes, and cilantro.
