Bubble Up Enchiladas

Ingredients

  • 2 cups salsa verde
  • 1/2 cup fat free sour cream
  • 1/8 teaspoon garlic powder
  • 2 cups chicken breast, cooked and shredded
  • 1 cup reduced fat Mexican cheese, shredded, divided
  • 6 oz. pre-made biscuit dough

Instructions

  • Preheat the oven to 350 degrees F.
  • Add the salsa verde, sour cream and garlic powder to a mixing bowl and whisk together.
  • Stir in the chicken breast and 1/3 cup of the Mexican cheese.
  • Cut each biscuit into 8 pieces. Stir into the salsa verde mixture.
  • Spray a 2.5 quart casserole dish with no-stick spray and pour the mixture into it. Top with the remaining Mexican cheese.
  • Bake for 30 minutes.
