Broccoli, Chicken & Cheddar Hand Pies

Ingredients

  • 8 Pillsbury buttermilk biscuits
  • 1 teaspoon light butter
  • 2 tablespoons chopped yellow onion
  • 3/4 cup chopped broccoli (fresh or frozen)
  • 1 1/2 cups boneless, skinless chicken breast, cooked and shredded
  • 1/2 cup reduced fat sharp cheddar cheese
  • 1 egg (plus 1 tablespoon water, whisked together)
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Preheat oven to 375 degrees F.
  • Melt the butter in a large skillet and sauté the onions for 3 minutes. Add the chopped broccoli and cook 2 minutes. Stir in the chicken, cheese, garlic powder, salt and pepper. Turn off the heat and set aside.
  • Lightly flour a work surface. Use a rolling pin to roll out the biscuit to 1/8" thickness. Add a heaping tablespoon of the broccoli mixture to the biscuit.
  • Brush the egg wash along the edge of the biscuit then fold together and seal. Use a fork to press the edges together. Place the pie on a baking sheet lined with parchment paper. Repeat until you have 8 pies.
  • Bake 10-14 minutes or until the biscuits are golden brown.
