Ingredients
8Pillsbury buttermilk biscuits
1teaspoonlight butter
2tablespoonschopped yellow onion
3/4cupchopped broccoli (fresh or frozen)
1 1/2cupsboneless, skinless chicken breast, cooked and shredded
1/2cupreduced fat sharp cheddar cheese
1egg (plus 1 tablespoon water, whisked together)
1/8teaspoongarlic powder
1/4teaspoonsalt
1/8teaspoonblack pepper
Instructions
Preheat oven to 375 degrees F.
Melt the butter in a large skillet and sauté the onions for 3 minutes. Add the chopped broccoli and cook 2 minutes. Stir in the chicken, cheese, garlic powder, salt and pepper. Turn off the heat and set aside.
Lightly flour a work surface. Use a rolling pin to roll out the biscuit to 1/8" thickness. Add a heaping tablespoon of the broccoli mixture to the biscuit.
Brush the egg wash along the edge of the biscuit then fold together and seal. Use a fork to press the edges together. Place the pie on a baking sheet lined with parchment paper. Repeat until you have 8 pies.
Bake 10-14 minutes or until the biscuits are golden brown.
