Breakfast Crunchwrap

Ingredients

  • 1 1/4 Ole Xtreme high fiber tortillas
  • 1 Hash brown patty
  • 2 eggs
  • 1-2 tablespoons diced ham
  • 1 1/2 tablespoons reduced fat Mexican cheese, shredded
  • Salt and pepper, to taste

Instructions

  • Cook the hash brown patty in the oven, stovetop or air fryer.
  • Add the eggs to a small bowl and whisk together, then add the ham.
  • Spray a heated pan with olive oil and add the eggs and ham. Once cooked set them aside.
  • Lay out the whole tortilla. Top it with the cheese, then hash brown patty.
  • Add the scrambled eggs and ham then top with the piece of tortilla. Fold up the bottom tortilla one section at a time until it's folded up.
  • Place in a heated pan that's been sprayed with olive oil, seam side down. Cook for 2 minutes on each side, or until the tortillas is golden and crunchy.
