BLT Chicken Salad

This is a delicious combination of BLT’s and chicken salad. You can keep it low carb by eating it on its own or add it to some low point bread for a filling sandwich.

It’s also great for meal prep or lunch on the go.

I love making chicken salad for lunch because it’s packed full of protein.

It’s also fun to experiment with chicken salad. I’ve made Ranch Chicken Salad, Cottage Cheese Chicken Salad, and Jalapeno Popper Chicken Salad.

The Ingredients

Chicken Breast: This recipe is perfect for using up leftover chicken or a rotisserie chicken. You could also use canned chicken breast.

4-6 ounces of boneless skinless chicken breast contains between 35-53 grams of protein. It’s good to aim for 15-30 grams of protein at each meal.

Bacon: I use center cut bacon in most of my recipes. It’s a little bit better for you since the fatty ends are cut off.

I like that it is only 1 point per slice. It also adds 5 grams of protein to the recipe.

Red Onion: I love using this in chicken salad because it adds so much flavor.

Lettuce: Iceberg lettuce is my go-to for BLT’s so that’s what I used. I didn’t add the lettuce to the chicken salad because I didn’t want it to get watery.

Instead, I laid it on my piece of bread. You could also make a lettuce wrap with the BLT chicken salad.

Light Mayonnaise: To help keep it low in points I used light mayonnaise instead of regular.

Fat Free Sour Cream: I mixed this with the light mayonnaise to save points. 1 tablespoon of fat free sour cream is 0 points.

1 tablespoon of light mayonnaise is 1 point but if I were to use 2 tablespoons of light mayonnaise it jumps to 3 points. That’s why I did half mayo and half sour cream.

Seasonings: I added a pinch of garlic powder, onion powder, salt, and black pepper.

I calculated the points for just the BLT Chicken Salad. It’s only 2 points as is. If you add two slices of 1 point bread it’s only 4 points for the entire sandwich.

How to Make BLT Chicken Salad

Cook the bacon until it is cooked all the way through. Remove any excess grease.

Cut or shred the chicken into bite-size pieces. Add the chicken to a mixing bowl.

Chop the bacon and add it to the chicken. Chop the red onion and tomato then add it to the bowl.

In a small bowl mix together the light mayonnaise, fat free sour cream, garlic powder, onion powder, salt, and pepper.

Pour the mayonnaise mixture over chicken and stir to combine.

Serving Suggestions

I like to make a sandwich with my BLT Chicken Salad.

Toast two pieces of (1 point each) bread, lay down a piece of iceberg lettuce and top with the BLT Chicken Salad.

BLT Chicken Salad is also the perfect filling for a lettuce wrap. I like using butter lettuce for wraps because it’s easy to bend and wrap up.

Ingredients

  • 1 boneless, skinless chicken breast (cooked and shredded)
  • 1 slice center cut bacon
  • 1/2 Roma tomato, chopped
  • 1 slice red onion, chopped
  • 2 leaves iceberg lettuce
  • 1 tablespoon light mayonnaise
  • 1 tablespoon fat free sour cream
  • Seasonings: garlic powder, onion powder, salt, and pepper (a pinch of each)

Instructions

  • Cook the bacon in a frying pan until cooked all the way through. Place on a paper towel and remove any excess grease. Chop the bacon into small pieces.
  • Add the chicken, tomato, red onion, and bacon to a mixing bowl.
  • In a small bowl add the light mayonnaise, fat free sour cream, garlic powder, onion powder, salt, and pepper. Stir to combine.
  • Pour the mayonnaise mixture over the chicken and mix together. Serve immediately or cover and refrigerate until ready to eat.
