Black Bean Tostada

Ingredients

  • 4 Ole corn tostadas
  • 15 oz. can black beans (drain and rinse)
  • 1/2 cup water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 cup reduced-fat Mexican cheese, shredded

Instructions

  • Preheat oven to 350 degrees F. Place the tostada shells on a baking sheet and bake for 5 minutes.
  • Drain and rinse the black beans, then add them to a saucepan. Add the water, garlic powder, and cumin. Cook over medium heat for 10 minutes.
  • Once the beans start to break open use a masher or fork to break down the beans until they're creamy. If they seem dry you can add 1-2 tablespoons of water.
  • Divide the beans into four servings, then top each tostada. Sprinkle on the cheese and any additional toppings you would like.
