Bell Pepper Egg Boats

Ingredients

  • 2 bell peppers (colors of your choice, I used red and orange)
  • 4 eggs
  • 1/4 cup reduced-fat Mexican cheese, shredded
  • Salt, black pepper, and garlic powder, to taste

Instructions

  • Start by slicing the bell peppers in half lengthwise and remove the seeds and membranes.
  • Place the bell pepper halves in the air fryer basket, cut side up. (If you're baking them in the oven add them peppers to a baking sheet.)
  • Crack an egg into each bell pepper half, being careful not to overflow the egg.
  • Sprinkle 1 tablespoon of cheese over each bell pepper.
  • Season with salt, black pepper, and garlic powder.
  • Carefully place the air fryer basket back into the air fryer and cook the bell peppers for 10-12 minutes, or until the eggs are cooked to your desired level of doneness.
  • Once cooked, remove the bell pepper egg boats from the air fryer and let them cool slightly before serving.

For the oven:

  • Preheat oven to 400 degrees before preparing the bell pepper egg boats.
  • Bake for 15-20 minutes, or until the eggs are cooked to your desired level of doneness.
