In this blog post, I’ll walk you through the process of creating a healthier version of beef enchiladas that everyone will love.

The Ingredients

Flour Tortillas: I used Mission Carb Smart flour tortillas. They taste great and they’re only 2 points each.

Lean Ground Beef: To keep it low in points I used 96% lean ground beef. It’s a great way to save points without sacrificing the flavor.

Tomato Sauce: This is used for the base of the enchilada sauce. It adds a rich, savory flavor without adding points.

Cheese: Using a reduced-fat cheese is perfect for this recipe, I used reduced-fat Mexican cheese.

Onion: I used chopped yellow onion to add flavor to the enchilada sauce. It’s another 0 point ingredient that adds a lot of flavor.

Seasonings: Spices and herbs are your best friends for adding flavor without extra calories. I used chili powder, coriander, cumin, garlic powder, and salt to season the enchilada sauce.

How to Make Beef Enchiladas

Spray a nonstick saucepan with cooking spray. Add the chopped onion and saute for 3 minutes.

Stir in the chili powder, coriander, cumin, garlic powder, and salt.

Slowly stir in the tomato sauce. Stir together each time you add more tomato sauce. Add the water and mix together.

Cover and simmer for 5 minutes.

While the sauce is simmering, brown the ground beef. Season it with garlic powder, black pepper, and salt.

Drain the excess grease from the ground beef.

Add 1/2 cup of the enchilada sauce to the ground beef. Also stir in 1/2 cup of the reduced-fat Mexican cheese.

Spray an 8×8 pan with cooking spray.

Lay out a tortilla. Add 1/4 of the beef mixture to the center of the tortilla. Roll the tortilla up and place in the baking dish seam side down.

Repeat with the remaining ingredients. Once all four tortillas are rolled up and in the baking dish pour the rest of the enchilada sauce over them.

Sprinkle the remaining cheese on top of the enchilada sauce.

Bake for 25 minutes at 350 degrees F.

Serving Suggestions

Fresh herbs like cilantro or green onions can add a burst of flavor and a pop of color. I also added some fat-free sour cream.

A squeeze of fresh lime juice over your finished dish can elevate the flavors and provide a zesty finish.

For a well-rounded meal, consider pairing your beef enchiladas with a healthy side dish such as a crisp green salad with a tangy lime vinaigrette.

You might also enjoy a side of black beans or a small serving of brown rice, both of which offer additional fiber and nutrients.

Roasted vegetables, such as zucchini, bell peppers, or asparagus, can bring extra color and nutrition to your meal.

Storing and Reheating Leftovers

When it comes to preserving the deliciousness of your beef enchiladas, proper storage and reheating are key. To keep them fresh, place the enchiladas in an airtight container and refrigerate them for up to 3 days.

When you’re ready to enjoy your leftovers, they can be reheated in the oven, microwave, or skillet.

For the oven, preheat it to 350°F, place the enchiladas in an oven-safe dish, cover with foil, and bake until they are heated through, usually about 20-25 minutes.

If you’re pressed for time, the microwave offers a quicker reheating solution. Place the enchilada on a microwave-safe plate, cover with a microwave-safe lid or a damp paper towel to retain moisture, and heat on medium power for 1-2 minutes, or until warmed through.

To heat the enchiladas in a pan, lightly coat a non-stick skillet with cooking spray, place the enchiladas in the skillet, cover with a lid, and heat on medium-low. This method takes about 10-15 minutes and helps maintain a slightly crisp exterior.
