Beef Enchilada Soup

This soup is packed with flavor and hearty enough to fill you up!

Each serving is almost 3 cups and only 4 points. Perfect for a filling lunch or dinner.

The Ingredients

Lean Ground Beef: 96% lean ground beef helped to cut down the points in this recipe. One pound is only 12 points.

Onions: I used yellow onion for a hint of sweetness. They are cooked with the ground beef to add flavor to the beef.

Red Bell Pepper: This helps to add a little bit of a crunch to the soup. The bonus is it’s 0 points.

Garlic: Fresh garlic is a must for this recipe. Using a garlic press makes it easy to mince.

Taco Seasoning: I used store bought taco seasoning but you can also make your own. With cumin and chili powder it helps to bring about that Mexican flavor.

Beef Broth: This is the foundation of the recipe. It helps to tie all of the ingredients together.

Enchilada Sauce: You can’t make Beef Enchilada Soup without enchilada sauce. I used a 10 ounce can of store bought enchilada sauce.

Fire Roasted Diced Tomatoes with Green Chilies: This adds even more flavor to this delicious soup. Don’t drain the tomatoes, you want to include the liquid as well.

Corn: I kept it simple and used canned corn for this recipe. Simply drain the liquid and add the corn.

Black Beans: I bought canned black beans, drained and rinsed them. They’re high in protein and fiber.

It may seem like a lot of ingredients but all together it cost me less than $20 to make.

How to Make Beef Enchilada Soup

Heat a Dutch oven or large pot over medium heat and add the ground beef. Break the beef into crumbles as it cooks.

Once the beef is slightly pink add in the onion, red bell pepper, and minced garlic. Sauté for 3-4 minutes.

Drain any grease from the ground beef.

Add the taco seasoning and stir to combine.

Pour in the beef broth, enchilada sauce, fire roasted tomatoes, corn, and black beans.

Bring the mixture to a boil, reduce the heat and simmer for 20 minutes.

That’s it! This recipe is so easy to make. It’s perfect for meal prep or a cozy meal at home.

Serving Suggestions

Consider topping your soup with reduced-fat cheddar cheese or fat-free sour cream to add a creamy contrast.

Chopped cilantro or green onions can provide a fresh burst of color and flavor.

For those who enjoy a bit of crunch, adding crushed tortilla chips or a handful of crispy tortilla strips on top can provide a satisfying texture. You can also garnish with sliced jalapeños for an extra kick of heat or diced avocado for a creamy and rich addition.

To make the meal more substantial, serve the soup alongside a side of warm cornbread or a light salad with avocado and lime dressing.

  • 1 lb. 96% lean ground beef

  • 1 (15 oz.) can of corn, drained
  • 1 (15 oz.) can of black beans, drained and rinsed

Instructions

  • Pour in the beef both, enchilada sauce, fire roasted tomatoes, corn, and black beans. Bring the mixture to a boil, reduce the heat and simmer for 20 minutes.
  • Let the soup cool slightly before serving.
