Bean and Cheese Tostadas (Taco Bell Copycat Recipe)

Ingredients

  • 4 Ole corn tostadas
  • 1 (16 oz.) can fat-free refried beans (stir in 2-3 tablespoons of water to make the beans easier to spread)
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • 1/4 cup Taco Bell Sauce (mild or hot)

Optional toppings:

  • Shredded lettuce, chopped tomatoes, additional shredded cheese (add extra points for the cheese)

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone mat for easy cleanup.
  • Place the tostadas on the baking sheet.
  • Evenly spread the refried beans over the tostadas. Add two tablespoons of the reduced-fat Mexican cheese to each of the tostadas.
  • Place the tostadas in the oven for 7 minutes or until the cheese is melted.
  • Top each tostada with 1 tablespoon of the Taco Bell Sauce, shredded lettuce, and tomatoes.
