BBQ Muffin Cups
Whether you’re looking for a low-point snack or a Super Bowl appetizer these BBQ Muffin Cups will be a hit!
The best part is nobody will know they are Weight Watchers friendly.
They’re easy to prepare and even easier to enjoy.

The Ingredients
Biscuits: I used Pillsbury Flaky Layers Biscuits. I split each biscuit in half, giving me two biscuits instead of one.
That turned my 8 pack of biscuits into 16. The flaky layer biscuits are easy to split in half. You can watch the video to see exactly how I did it.
Ground Beef: I used 96% lean ground beef since it’s 0 points with the current plan. It is a good source of protein and essential nutrients like iron and zinc.
BBQ Sauce: G Hughes Sugar Free BBQ Sauce is only 1 point for 1/2 cup. Regular BBQ sauce is loaded with sugar. This helped to save approximately 13 points.
Cheese: Reduced-fat cheese helped to lighten up this recipe. I used reduced-fat Mexican cheese but you could also do cheddar or mozzarella.

How to Make BBQ Muffin Cups
Preheat the oven to 400 degrees F. Spray a muffin pan with nonstick cooking spray.
In a skillet over medium heat, cook the 96% lean ground beef until it’s thoroughly browned and no pink remains.
Make sure to drain any excess fat to keep the dish as healthy as possible. Once the beef is cooked and drained, mix in your sugar-free BBQ sauce.
Split each flaky layer biscuit in half. Position one half of each biscuit into the bottom of a muffin tin, pressing gently to create a small well that will hold the filling.
Take the beef and BBQ sauce mixture and spoon it generously into each of the biscuit-lined muffin cups.
Sprinkle a layer of reduced-fat cheese over each muffin cup.
Place the muffin tin in the preheated oven and bake until the biscuits are golden brown and the cheese has fully melted, which usually takes about 12 to 14 minutes.
Once done, remove from the oven and let them cool slightly in the muffin tin before transferring to a serving platter.
Serving Suggestions
To complement the BBQ Muffin Cups, consider offering a selection of dipping sauces on the side. Options like a low-point ranch dip, spicy sriracha mayo, or a classic blue cheese dip can add variety and enhance the tasting experience.
Top the muffin cups with cilantro and red onion for an extra layer of flavor.
If you’re having a party pair these savory treats with an array of other light appetizers, such as fresh vegetable platters or crisp salads, to provide a diverse selection for your guests.
