BBQ Chicken Tortilla Pizza (Air Fryer or Oven Baked)

Whether you’re planning a quick lunch, a casual dinner, or even a snack, this BBQ Chicken Tortilla Pizza is versatile enough to fit any meal.

It’s also highly customizable, allowing you to add your favorite veggies or experiment with different types of cheese.

The Ingredients

Mission Carb Balance Flour Tortilla: This is the base of the recipe, and it helps to keep it low in points. One tortilla is only two points.

Chicken: I used boneless, skinless chicken breast. Boneless, skinless chicken thighs would also work. Both are a great source of protein and 0 points.

BBQ Sauce: I used G Hughes sugar-free BBQ sauce. It tastes great and it’s 0 points. This is used in place of traditional pizza sauce.

Cheese: Using part-skim mozzarella cheese helps to lower the points.

Red Onion: I love red onion on BBQ chicken pizza. It adds so much flavor.

Cilantro: Once the pizza was done cooking, I topped it with fresh cilantro. It’s a great 0 point addition.

How to Make a BBQ Chicken Tortilla Pizza

What makes this recipe stand out is the crust preparation. To make sure the tortilla is crispy I spray both sides with 0 point oil, then add it to a nonstick frying pan.

I cook the tortilla for 2-3 minutes on each side, or until it’s slightly golden.

Top the tortilla with 1-2 tablespoons of the sugar-free BBQ sauce.

Next, layer on the cooked chicken pieces. You want to make sure there is chicken in every bite.

Add the red onion, then top with the part-skim mozzarella cheese.

Place the tortilla in the air fryer at 350 degrees F for 5 minutes, or until the cheese is melted.

Carefully remove the tortilla and top it with fresh cilantro.

If you are baking the tortilla pizza, place it on a baking sheet and bake at 350 degrees F for 7-10 minutes, or until the cheese is melted.

Customizing Your Pizza

One of the best things about this pizza is you can easily customize it to make it even more enjoyable.

An easy way to do that is to add more vegetables. Sliced bell peppers, mushrooms, spinach, or cherry tomatoes are all great options.

If you’re a fan of spice, consider sprinkling some red pepper flakes or adding sliced jalapeños for an extra kick.

Another way to customize your pizza is to switch up the cheese. I like to do a combination of part-skim mozzarella and reduced-fat cheddar cheese. You could also use all cheddar cheese.

Ingredients

  • 1 Mission Carb Smart flour tortilla
  • 1-2 tablespoons G Hughes sugar-free BBQ sauce
  • 1/2 cup boneless, skinless chicken breast, cooked and shredded
  • 1 tablespoon red onion, chopped
  • 1/3 cup part-skim mozzarella cheese, shredded
  • Fresh cilantro
  • Zero point olive oil spray

Instructions

  • Spray both sides of the tortilla with olive oil spray, then add it to a nonstick frying pan over medium-low heat.
  • Cook the tortilla for 2-3 minutes on each side, or until it's slightly golden.
  • Top the tortilla with 1-2 tablespoons of BBQ sauce. Spread it evenly over the tortilla.
  • Add the cooked chicken pieces making sure there is chicken in every bite. Add the red onion, then top with the mozzarella cheese.

For the air fryer:

  • Place the tortilla in the air fryer at 350 degrees F for 5 minutes, or until the cheese is melted. Carefully remove the tortilla and top it with fresh cilantro.

For the oven:

  • Preheat the oven to 350 degrees F. Place the tortilla pizza on a baking sheet and bake 7-10 minutes, or until the cheese is melted.
