BBQ Chicken Quesadillas
These quesadillas are perfect for days when you want something delicious but don’t want to break your diet.
They’re filled with a flavorful blend of chicken, barbecue sauce, and reduced-fat cheese.
It’s sure to satisfy your cravings while keeping calories in check.

This recipe is also perfect for using up leftover chicken.

How I kept these quesadillas light:
Traditional quesadillas are often filled with heavy cheeses, high-calorie meats, and fried to perfection.
However, this recipe takes a lighter approach while still maintaining all of the flavor.
I used Mission Carb Balance tortillas because they are only 2 points each. Even though they’re low in points they’re still delicious.
Since boneless, skinless chicken breast is 0 points that’s what I chose to use. I used sugar-free BBQ sauce to mix with the shredded chicken breast, which was only 1 point.
Using reduced-fat cheddar cheese instead of regular cheddar cheese also helped to lighten up these quesadillas.
I used a nonstick frying pan and left out the oil/butter.

How to make BBQ Quesadillas:
Preheat a nonstick frying pan over medium heat.
In a medium mixing bowl, add the shredded chicken breast and sugar-free BBQ sauce, and stir together.
Take one tortilla and add half of the chicken to one side of the tortilla. Top the chicken with red onions, then half of the cheese.
Place the quesadilla in the pan and cook for 3-4 minutes on each side, until the cheese is melted and the tortilla is crispy.
Remove the quesadilla from the pan and cut in half.
Repeat all of the steps with the second quesadilla.
Serve warm and enjoy!

- These quesadillas taste great with cilantro.
- Fresh salsa and guacamole are also a great addition.
- Grilled corn – this pairs exceptionally well with BBQ chicken.
- Mixed greens salad – this is perfect for a low point option.

- 2 boneless, skinless chicken breasts, cooked and shredded
- 1/4 cup sugar-free BBQ sauce
- 1/2 small red onion, sliced
- 6 tablespoons reduced-fat cheddar cheese, shredded
Instructions
- Preheat a nonstick frying pan over medium heat.
