Banana Pudding Cupcakes

Ingredients

  • 1 box Pillsbury sugar free classic yellow cake mix
  • 12 oz. Sprite Zero or Diet 7UP
  • 24 reduced fat Nilla Wafers
  • 1 (.9 oz) box sugar free banana cream pudding
  • 2 cups skim milk
  • fat-free Reddi Wip
  • 2 bananas

Instructions

  • Prepare cupcake pan with liners. Add one Nilla Wafer to the bottom of each.
  • Add cake mix and Sprite Zero to a mixing bowl. Use a mixer on medium speed for 2 minutes, then fill the cupcake liners with about 3 tablespoons of batter each.
  • Bake the cupcakes according to the directions on the box.
  • Prepare the pudding while the cupcakes are baking. Whisk together the pudding mix and milk for 2 minutes. Set aside to thicken.
  • Slice the bananas into thin pieces to put on top of the cupcakes.
  • Once the cupcakes have cooled add about 1 tablespoon of pudding and spread it evenly like it's icing. Add a tablespoon of Reddi Wip and top with a piece of banana. Enjoy!
