Banana Bread

Ingredients

  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 1/3 cup unsweetened applesauce
  • 1/2 cup sugar-free maple syrup
  • 1/4 cup skim milk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 3/4 cup all purpose flour

Instructions

  • Preheat oven to 350 degrees F.
  • Peel the bananas, add them to a mixing bowl and mash them.
  • Add the applesauce, maple syrup, skim milk, eggs, baking soda, vanilla extract, salt and cinnamon to the bananas. Stir together.
  • Next add the flour and stir until blended, but do not over stir it.
  • Spray your bread pan with no-stick cooking spray, then add the banana bread mixture.
  • Bake 50-55 minutes or until a toothpick inserted in the center comes out clean.
