Bacon and Broccoli Frittata

Ingredients

  • 6 eggs
  • 3/4 cup skim milk
  • 2 cups chopped broccoli
  • 1/4 cup sliced red onion
  • 1/2 cup reduced-fat mild cheddar cheese, shredded
  • 3 slices center cut bacon, cooked and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  • Preheat oven to 350 degrees F. Spray a 9" pie dish with nonstick cooking spray.
  • Spray a nonstick skillet with olive oil spray. Sauté the broccoli and onions for 7-10 minutes.
  • In a medium bowl add the eggs, skim milk, salt, pepper, and garlic powder. Whisk together.
  • Add the broccoli and onions to the pie dish. Next, add the chopped bacon and cheddar cheese.
  • Pour the egg mixture evenly over the ingredients.
  • Bake 40-45 minutes or until the center is set. Let sit 5 minutes before serving.
