Avocado Ranch Chicken Burrito

Ingredients

For the avocado ranch:

  • 1 avocado
  • 1/2 cup fat-free Greek yogurt
  • 1/4 cup light mayonnaise
  • 2 tablespoons almond milk
  • 1 tablespoon lime juice
  • 1 clove garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dill
  • 1 teaspoon parsley
  • Salt and pepper, to taste

For the burritos:

  • 2 boneless, skinless chicken breasts
  • Chili powder, onion powder, garlic powder, salt, and pepper
  • 4 Mission Carb Balance Flour Tortillas
  • 1/2 cup reduced-fat Mexican cheese
  • lettuce, onion, tomato, and cilantro (optional)

Instructions

  • In a blender or food processor, combine avocado, Greek yogurt, mayonnaise, almond milk, garlic, lime juice, onion powder, dill, parsley, salt, and pepper. Blend until smooth and creamy.
  • Season the chicken with chili powder, onion powder, garlic powder, salt, and pepper. Cook until fully done (grilled, baked, or sautéed), then shred or chop.
  • Warm the tortillas slightly so they're easier to fold.
  • Spread a spoonful of avocado ranch dressing inside each tortilla. Add chicken, a sprinkle of cheese, and lettuce. You can also add cilantro, onion, and tomato.
  • Roll up the burrito tightly. Serve immediately or wrap in foil for a grab-and-go meal.
