Affordable Shrimp and Broccoli for Two

The Ingredients

Shrimp: I bought large, peeled, and deveined shrimp. Besides being low in calories and fat, they’re high in protein.

Broccoli: Broccoli is high in fiber, which promotes good digestive health.

It is packed with essential vitamins and minerals, including vitamins C and K, which are crucial for immune support and bone health.

Lemon: The acidity of lemon juice can brighten the flavor of the shrimp, balancing its natural sweetness and briny notes.

Garlic: Fresh garlic adds so much flavor to a dish. It’s known for its immune-boosting properties and may help lower blood pressure and cholesterol levels.

Pantry Staples: These are the ingredients not included in the price of the meal. I used olive oil, onion powder, parsley, oregano, paprika, salt, and black pepper.

Budget Calculations

Here is what I spent on the dish:

  • Large shrimp (peeled and deveined) – $5.00
  • Broccoli – $1.25
  • Lemon – $.75
  • Garlic – $.67

All together, I spent $7.67. It was enough food to feed 2 people.

How to Make Shrimp and Broccoli Foil Packets

If you bought frozen shrimp, you want to make sure they are completely thawed.

Add the olive oil to a medium sized bowl. Also add the minced garlic, onion powder, oregano, parsley, paprika, salt, and black pepper.

Use a spoon to blend the ingredients.

Add the shrimp to the bowl and use tongs to toss them and coat them in the seasoning.

Place two pieces of aluminum foil on a baking sheet and spray them with cooking spray.

Add half of the shrimp to each piece of foil.

Cut the broccoli crown into bite-size pieces and add half to each piece of foil.

I also spritzed the broccoli with cooking spray and seasoned it with salt and pepper. Add two lemon slices to each foil packet.

Fold and seal the foil. Place in the oven for 15-20 minutes at 400 degrees F. Shrimp is fully cooked when it reaches an internal temperature of 135-140 degrees F.

Serving Suggestions

If you’re looking for a little more substance, you can add white or brown rice to the meal. It’s cost effective and filling.

Pasta is yet another way to make your meal more hearty. A simple pasta like linguine or spaghetti works well, allowing the shrimp and broccoli to shine.

Tossing the cooked pasta with a little bit of olive oil, garlic, and a squeeze of lemon can enhance the overall flavor and make the dish even more enjoyable.

If you prefer a more vegetable-forward meal, consider pairing your shrimp and broccoli packets with a fresh garden salad.

Ingredients

  • 10 oz. large shrimp (peeled, deveined, and thawed)
  • 1 crown broccoli
  • 4 lemon slices
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 400 degrees F.
  • Add the olive oil to a medium sized bowl. Also add the minced garlic, onion powder, oregano, parsley, paprika, salt, and black pepper. Mix the ingredients together.
  • Add the shrimp to the bowl and use tongs to toss them and coat them in the seasoning.
