Taco Bell Meximelt Copycat
This Meximelt is a lightened up version of Taco Bell’s Meximelt!
When I checked the WW app to see how many points a Meximelt is I was surprised to see it’s 8 points. I expected it to be higher for some reason.
Even at 8 points I knew I could lighten it up. The Meximelt I made is only 5 points!

My Meximelt is also more filling, in my opinion.
I wanted the Meximelt to taste as much like Taco Bell as possible so I stuck with ground beef. I used 95% lean ground beef.
Replacing regular Mexican cheese with reduced fat Mexican cheese helped to save some points too.
Once again I used the Mission Carb Balance Flour Tortillas. I love them because they are only 2 points each and they taste great.
I used the actual Taco Bell taco seasoning for the ground beef. It was the first time I have used it. I honestly couldn’t tell much of a difference between that and other taco seasonings, but it was good.
This recipe is really easy. Perfect for lunch or dinner!
Once I had the beef cooked I grabbed a tortilla, added some cheese, then ground beef and pico de gallo. I folded in the sides, then the bottom and rolled it up.
I wrapped it up in a paper towel and put it in the microwave 15-30 seconds. Once the cheese was melted, it was ready to eat!

Weight Watchers Meximelt

Ingredients
- 1 lb. 95% lean ground beef
- 1 oz. taco seasoning
- 6 Ole Xtreme High Fiber Tortillas
- 1 cup reduced-fat Mexican cheese, shredded
- Pico de gallo
Instructions
- Brown and drain the ground beef. Break the beef up into small pieces. Add the taco seasoning and prepare according to the seasoning directions.
- Lay out one tortilla. Add the Mexican cheese, ground beef and pico de gallo. Fold in the sides, then the bottom, then roll up like a burrito.
- Wrap in a paper towel then place in the microwave 15-30 seconds, once the cheese is melted. Repeat with remaining ingredients.
